Pepper chicken recipe is a constant household edibles, easy to make with ingredients that you already have in your pantry. Fast, full of flavoured by sprinkling of crushed ginger, garlic paste and cardamom pods with crused peppercorns.

Stir fries are such a great way to make dinner because they are so quick to put together. If you think chicken bones will disrupt your preparations, you can use skinned pieces of chicken breast.

1Chicken, skinned

3Curry leaves

2tea spoon garlic puree



Vegetable oil

2tea spoon ginger, finely grated

2 red onions, finely sliced or diced

2tomatoes, neately and finely chopped

4cinnamon sticks

4cardamom pods

1tea spoon red chilli powder

1 tea spoon ground cumin

1 tea spoon ground turmeric

2tea spoon ground coriander

1tea spoon peppercorns, crushed

3green chillies


Wash and prepare your skinned chicken by cutting each breast into 3 pieces, cut the leg and thigh each into 2 pieces and set aside until required.

Blend and make a paste of your 2 tsp ginger and 2tsp garlic puree mix them both together

  • 2 tea spoon garlic puree
  • 2 tea spoon ginger

Heat your vegetable oil in your dry sauce pan/pot and set to medium heat on your cooker
Pour in the chopped onions after the oil must have heated for few seconds and fry for 30seconds
Add in the blended pepper,cinnamon sticks, cardamom pods, cloves and tomatoes and allow to fry till the water dries up at least for 30-seconds. keep stirring occasionally until nicely coloured.

  • 4 cloves
  • 2 red onions
  • 4 cardamom pods
  • 4 cinnamon sticks
  • vegetable oil

Add in a little spices because the chicken is spicy.


Add the chicken, the ginger-garlic paste, turmeric powder, salt, grounded coriander, grounded cumin and chilli powder for about 10 minutes. stir thoroughly with a spatula or a wooden spoon until the sauce coats every part of the chicken.

  • 1 tea spoon ground cumin
  • 1 tea spoon ground turmeric
  • 1 tea spoon chilli powder
  • 2 tea spoon ground coriander
  • Salt


Add half cup of hot water, stir well, cover with a simmer and lid for another 15 mins.


Then you can add your green chillies, curry leaves and chopped tomatoes, Reduce your heat so it steam for 5 minutes and make sure you allow your chicken to be well cooked. Observe the thighs and drumsticks with a fork to judge if they are well cooked or not.

  • 2 tomatoes
  • 3 curry leaves


Put down your pan from the heat, sprinkle the crushed peppercorns and serve immediately while its hot.
